Herb Roasted Chicken with Lemon Orzo

This Herb Roasted Chicken with Lemon Orzo from our friend, Kayla's Been Cooking, is the perfect way to try our House Blend Chicken All-Purpose Seasoning.

Our signature chicken blend features the perfect mix of sage, porcini, rosemary, bell pepper and more, taking your everyday chicken from good to great.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 1 cup orzo pasta
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 cup or more chicken broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Fresh parsley, chopped (for garnish)

Preparation Instructions:

Preheat your oven to 400°F.

Pat the chicken thighs dry with paper towels. Season both sides with salt and black pepper and The House Blends Chicken All-Purpose Seasoning.

In an oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken, skin side down, until golden brown (about 4-5 minutes per side). Remove the chicken from the skillet and set aside.

In the same skillet, add chopped onion and cook until softened. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

Stir in the orzo pasta and cook for 2-3 minutes until lightly toasted. Pour in the chicken broth, lemon juice, and lemon zest. Bring to a simmer and return the seared chicken thighs to the skillet.

Transfer the skillet to the preheated oven and roast for about 25-30 minutes or until the chicken is cooked through. Garnish and serve!

This recipe is delicious, but more broth is needed than 1/2 cup. I thought it was off so I added 1 cup, but it still needed more as some of the orzo was hard. The next time, I’ll try 1 1/2 to 2 cups.

Have made this twice, flavor is good, chicken is tender but the orzo is completely over cooked and impossible to eat. Would love to have an update, as I think more liquid or lower temp is needed?
