We're in the process of remodeling a kitchen and we splurged on a very nice cooktop. When choosing an exhaust hood, the salesperson encouraged me to go with a less powerful blower, saying "you'd have to be STIR-FRYING with CURRY before you'd need the more powerful model". I thought that was so hilarious (but sad). Apparently most people who purchase higher-end cooktops never really use them!

I know - I always drool over the fancy kitchens I see in real estate catalogs (marble counters! Plenty of space! TWO ovens!), but it's depressing to see them used only for show. In my tiny kitchen, my blower is so weak I have to disable my smoke detector whenever I cook anything more than scrambled eggs. I hope your new cooktop is great for *gasp* stir-frying curry!

As a chef and home cook I have found it to be so sadly true that in the average american home we have become what I call "dump cooks": dump a can of this and dump a jar of that and dinner is ready. Many people don't even know that you can even make your own pasta with the right tools and inclination- "no, you don't just get it out of a box!"

However, we can entice while removing the fear by doing a little community cooking, where we cook/ can/ bake as a group (under the pretext of making Christmas gifts, or such), and show the fearful just how truely uncomplicated and even fun it is to play with flavors Then something is truely yours from your heart and your hands! And that is exactly where your lovely store comes in handy!

Hey Paige...Chef Clay here. Great article. I totally agree with you on your comment about the staff being excellent cooks and passionate & adventurous about food. Every employee at The Spice House has taught me about a thing or two about your wonderful spices, herbs & seasonings. Of the 100+ times I've been in The Spice House, you and your co-workers always manage to ask me "have you tried this yet?" and without fail, I can't wait to get home and cook something up just so I can tantalize my tastebuds once again. The staff at The Spice House is AWESOME! Winter is just around the corner and the soup kettles will be firing up soon so I'll be visiting you guys shortly.
